Garnelenpakete auf Mango- Chili- Relish / Prawnpackages with mango- chili- relish

Zutaten (2 Portionen)

14  Garnelen
~ 80g Udonnudeln
1 Chilischote
1 kleine Schalotte
50ml Mangosaft (z.B. Rauch)
1 EL Essig
1 TL Honig
1 EL Mehl
Saft 1/2 Zitrone
1 Ei
1 EL süße Teriyakisauce
fein geriebener Parmesan
Salz, Pfeffer

Zubereitung

Ingredients

14  prawns
~ 80g udon noodles
1 chilipepper
1 small shallot
50ml mangojuice (e.g. Rauch)
1 tbsp. vinegar
1 tsp. honey
1 tbsp. flour
juice of 1/2 lemon
1 egg
1 tbsp. sweet teriyakisauce
grated parmesan
salt, pepper

Preparation

The deep-frozen prawns are salted, peppered and mixed up with half of the lemon juice. Then you can put them aside for resting.

Next the chili peppers are cored and cut into thin slices. Also the shallots are cut in small pieces and then both of them are shortly fried in a pot. After few seconds you add the vinegar. Now the mango juice is mixed up with 1tbsp. of flour and the rest of the lemon juice. You can add the mango juice also to the pot stirring the mixture permanently. The heat is reduced to the lowest level and the relish has to simmer for about 20 minutes. You should taste it from time to time and add some salt if necassary.

Afterwards the noodles have to be cooked for about 7 minutes. Then they should cool down and get sticky.

The next step is pretty time-consuming. You have to take a bundle of noodles (5-10) and wrap them tightly around the prawns.

To get a tasty crust on the prawns we will now mix up the egg and the teriyakisauce with a pinch of salt. The prawns have to be coated with the egg mixture. Subsequently the parmesan is also spread over the prawns. The prawns are now ready to go into the oven at 200°C. As soon as they get a goldenbrown crust you can take them out and serve them together with the relish.

Tip: You can serve the dish with some mixed salad and a simple yoghurt dressing.

Enjoy it :) !

Pasta Hawaii

Zutaten (4 Portionen)

400g  Faschiertes
400g Spaghetti
100ml Brühe
200ml Tomatensauce
100ml Schlagobers
200g Cheddar
1 Dose Ananas-Würfel
1 Knoblauchzehe
1 Zwiebel
1 roter Paprika
1 EL Honig, Senf
Salz, Pfeffer

Zubereitung

Ingredients

400g  minced meat
400g spaghetti
100ml broth
200ml tomato sauce
100ml cream
200g cheddar
1 can pineapple-cubes
1 garlic clove
1 onion
1 red bell pepper
1 tbsp. honey and mustard
salt, pepper

Preparation

As the first step we have to mix up the minced meat, salt, pepper, 1 tbsp. honey and 1 tbsp. mustard. Next the garlic, onion and the pepper are cut into small pieces.

While the meat is resting for some minutes you can prepare the spaghetti. Those have to be cooked in a pot with water and some salt.

Now we have to brown the onion in a pan with olive oil. As soon as the onion gets glassy you can add the meat, the garlic and the bell pepper. This mixture is again fried for about 1 minute. Afterwards we will add the broth and cook the meat for another 5 minutes. Finally the tomatosauce and the cream are added. Now the heat can be reduced, so that the sauce only simmers.

Next we put the pineapple pieces into a pan, where also a bit of the juice should go with them. The pineapples are fried till they are goldbrown. This will give the dish a very sweet and fruity taste.

As soon as the noodles are ready, you can sieve them und add them to the sauce. Now the spaghetti and the pineapples are mixed into a baking pan.

As a final step you have to spread the cheese over the pasta and put the baking pan into the oven at 200° Celsius. When the cheese becomes goldenbrown you can serve the dish!

Enjoy it :) !

Steinpilz-Preiselbeer Risotto / Cep-Cranberry Risotto

Zutaten (4 Portionen)

200g Steinpilze
300g Risottoreis
400ml Apfel-Cider (trocken)
30g Preiselbeeren
Gemüse- oder Hühnerbrühe
100g geriebener Parmesan
1 große Zwiebel
2 Knoblauchzehen
20g Butter
Salz, Pfeffer
2 EL Zucker

Zubereitung

Ingredients

200g ceps
300g risotto
400ml dry applecider
30g cranberries
broth
100g grated parmesan cheese
1 onion
2 garlic cloves
20g butter
salt, pepper
2 tbsp. sugar

Preparation

We start with a normal risotto. Therefor we cut the onion in small chunks and roast them with oliveoil in a pan. As soon as the onion gets glassy we add the risotto and roast it, followed by adding 200ml of the cider. We let the rice cook till most of the cider is gone. Now it is time to add broth till the rice is covered with it. Again the water should vaporize and new broth is added till the rice is creamy but still firm to bite.

Now we prepare the cranberries. Therefor we heat the rest of the cider in a small pan togehter with the sugar. As soon as the cider starts to simmer we lower the heat and add the cranberries, which should bath in the hot cider.

When the broth in the rice is vaporized for the last time, you can add the cranberries togehter with the remaining cider. The rice is now heated again till the newly added cider has vaporized too. After that we add the butter and the parmesan cheese and mix it up gently.

At the end the cleaned and cut ceps are browned in a pan togehter with the rest of the onion, the garlic and some oliveoil. As soon as the ceps get glassy you can salt and pepper them and mix them also gently to the risotto. Now the risotto has to rest for about 5 minutes afterwards it is ready to be served.

Enjoy it :) !

Rentier-Carpaccio auf Moltebeerenvinaigrette / Reindeer-Carpaccio with Cloudberryvinaigrette

Zutaten (2 Portionen)

1 200-300 g Rentiersteak (alternativ Rindersteak)
250 g Moltebeeren (alternativ Brombeeren)
1 kleine Zwiebel
4 Essiggurkerl
4 EL Weinessig
1 Tasse Wasser
6 EL Olivenöl
2 EL Zucker
1 TL Senf
1 Bund Petersilie
Salz, Pfeffer

Zubereitung

Ingredients (2 Portions)

1 200-300 g Reindeersteak (or Beefsteak)
250 g Cloudberries (or Blackberries)
1 small Onion
4 Pickles
4 tbsp. Wine vinegar
1 Cup Water
6 tbsp. Oliveoil
2 tbsp. Sugar
1 tsp. Mustard
1 bunch Parsley
Salt, Pepper

Preparation

At first the steak has to get rid of its tendons. Therefor you have to cut them out in a way that the steak remains one piece. If there are some pieces of good meat which you had to cut off the steak just put it aside, we will reuse it later. Now where we have a tendons-free meat we can salt and pepper it as well as the small pieces we couldn't save. Afterwards the steak is formed to a roll and fixed with some cooking yarn or toothpicks.

Next step is to chop the parsley into small pieces and toss the steak in it.

While the meat rests for some time we will prepare the vinaigrette. Therefor the berries, sugar, vinegar, oil, the fine chopped onion and the water are mixed in a pot and are brought to simmer.

At next the steakroll is roasted very shortly from every side (5-10 seconds) in a hot pan with oliveoil. After that the meat should rest and the smaller meat-pieces are roasted in the hot pan but now for 1 minute from every side.

As soon as the vinaigrette is thick enough you can turn of the stove and add a little bit of mustard to the sauce. If it tastes to strong like vinegar you can add some water again and cook it till the right thickness is reached.

At the end the meat has to be cut in very thin slices, which are then served togheter with sliced pickles and the vinaigrette. If the carpaccio slices are to thick you can wrap them into clingfilm and beat it with a rolling pin or something similar.

Enjoy your meal :) !
