Ente auf Eierschwammerl | Duck with Chanterellesauce

Zutaten (2 Portionen)

Aufwand: hoch

1 Entenbrust
Sojasauce
2cl Whisky
Rosmarin, Oregano
50ml Brühe
150ml Orangensaft
20g gefrorene Butter
1 EL Currypulver
100g Polenta
200ml Wasser
1 EL Olivenöl
30g Parmesan
500g Eierschwammerl (fein geschnitten)
1 Zwiebel
150ml Kokosmilch
100ml Brühe
1 EL Currypulver

Zubereitung

Ingredients

Effort: high

1 duckbreast
soy sauce
2cl whisky
rosmary, oregano
50ml broth
150ml orange juice
20g frozen butter
1 tbsp. curry powder
100g polenta
200ml water
1 tbsp. olive oil
30g Parmesan
500g chanterelle (chopped)
1 onion
150ml coconut milk
100ml broth
1 tbsp. curry powder

Preparation

For this weeks recipe we start with a marinade for the duckbreast. Whisk up 2 tbsp. soy sauce, 2cl whisky, 50ml broth, 50ml orange juice and some rosmary and oregano. Fill the marinade into a freezer bag and add the duck breast, put it into the fridge. If you have enough time it would be perfect to do this part the day or at least some hours before you continue.

Now we will prepare a sauce which is used for the duck as sauce on the one hand but also for roasting it. Therefor we will first heat up 100ml orange juice. As soon as it starts to simmer add 1 tbsp. of curry powder and turn off the heat. Now add the frozen butter and whisk it up with fast and evenly movements. Put the resulting sauce into the fridge.

Before we start with the meat we have to prepare the polenta toasts. Therefor, put the polenta together with 200ml water and a bit olive oil into a pot and cook it until it turns into a creamy mash. Then add the parmesan and put the polenta onto a baking plate. Let it cool down so it turns into a compact layer of polenta. After that you have to put it into the oven at 220 °C until it turns golden-brown.

Now we can start with the main part. Take out the meat of the marinade and try to take off the skin, but without force. Under the loosen parts you have to put some of the already thickened orange sauce. Also put some of the sauce into a pan and heat it up. Add the duck and roast it for about 3 minutes on every side. Then the duck goes into the oven aswell and has to stay there for about 20 minutes.

Meanwhile we will prepare some asian flavoured chanterellesauce. Therefor chop 1 onion and fry it until glazed. Add the mushrooms and roast them until all the emerging water has vaporized. After that add the coconut milk and turn down the heat. Flavor the sauce with currypowder salt and pepper.

As soon as the polenta and the duck are ready bring them in shape and serve them togehter with the chanterellesauce.

Enjoy it :) !

Garnelenpakete auf Mango- Chili- Relish / Prawnpackages with mango- chili- relish

Zutaten (2 Portionen)

14  Garnelen
~ 80g Udonnudeln
1 Chilischote
1 kleine Schalotte
50ml Mangosaft (z.B. Rauch)
1 EL Essig
1 TL Honig
1 EL Mehl
Saft 1/2 Zitrone
1 Ei
1 EL süße Teriyakisauce
fein geriebener Parmesan
Salz, Pfeffer

Zubereitung

Ingredients

14  prawns
~ 80g udon noodles
1 chilipepper
1 small shallot
50ml mangojuice (e.g. Rauch)
1 tbsp. vinegar
1 tsp. honey
1 tbsp. flour
juice of 1/2 lemon
1 egg
1 tbsp. sweet teriyakisauce
grated parmesan
salt, pepper

Preparation

The deep-frozen prawns are salted, peppered and mixed up with half of the lemon juice. Then you can put them aside for resting.

Next the chili peppers are cored and cut into thin slices. Also the shallots are cut in small pieces and then both of them are shortly fried in a pot. After few seconds you add the vinegar. Now the mango juice is mixed up with 1tbsp. of flour and the rest of the lemon juice. You can add the mango juice also to the pot stirring the mixture permanently. The heat is reduced to the lowest level and the relish has to simmer for about 20 minutes. You should taste it from time to time and add some salt if necassary.

Afterwards the noodles have to be cooked for about 7 minutes. Then they should cool down and get sticky.

The next step is pretty time-consuming. You have to take a bundle of noodles (5-10) and wrap them tightly around the prawns.

To get a tasty crust on the prawns we will now mix up the egg and the teriyakisauce with a pinch of salt. The prawns have to be coated with the egg mixture. Subsequently the parmesan is also spread over the prawns. The prawns are now ready to go into the oven at 200°C. As soon as they get a goldenbrown crust you can take them out and serve them together with the relish.

Tip: You can serve the dish with some mixed salad and a simple yoghurt dressing.

Enjoy it :) !

Asiatische Hühnersuppe / Asian chickensoup

Zutaten (2 Portionen)

200g Hühner-Geschnetzeltes
100g Udon-Nudeln
400ml Brühe
70g Sojasprossen (oder gemischte Sprossen)
Kren
1 Zwiebel
1 Knoblauchzehe
Teriyakisauce
Kardamom, Curry-Pulver

Zubereitung

Ingredients

200g chicken stripes
100g udon noodles
400ml broth
70g sprouts
horseradish
1 onion
1 garlic clove
teriyakisauce
kardamom, curry-powder

Preparation

First the meat is salted and peppered. Then one tabelspoon of curry-powder and one pinch of kardamom
are added. Furthermore teriyakisauce is mixed under the meat which has then to rest in the fridge.

While the meat is resting we can start preparing the soup. Therefor we cut the horseradish into slices and peel and cut the onion and the garlic into two pieces. The vegetables are now browned with some oil and pepper for about 2 minutes. After that you can add the broth, which should be cooked for about 10 minutes.

Then we can add the noodles to the soup. Those have to be cooked for further 7 minutes togehter with the soup. After the 7 minutes you have to clear the soup with a noodle colander. The soup is put onto the oven at the lowest heat again to hold it warm. The noodles and the vegetables have to be seperated, where we'll reuse the half of the onions and the garlic. Those are cut into small pieces.

The cut vegetables are now browned in a pan with oliveoil. Also the chicken and the sprouts are added to the pan. When the mixture is browned you can add the cooked noodles together with 2 tablespoons of water. After 1 minute it is ready to serve.

Enjoy it :) !
