Bohnen Cupcakes | Bean Cupcakes

This week I decided to cook something completely different and tried one of the recipes I had in mind, but wasn't sure if the result would be edible ;). The result are these Bean Cupcakes which are mainly influenced by the austrian and african cuisine.

Ingredients

Effort: medium

200g Mung beans 2 eggs 1 small apple 1 May turnip 100g smoked pork belly 200g sauerkraut 1 tbsp. honey salt, pepper

Preparation (2 Persons)

For this recipe we have to soak the mung beans for around 12 hours. So be prepared to start with this the day before cooking. At the next day you have to wash the beans and cook them in fresh water for around 30 minutes.

Meanwhile we will prepare the filling of the cupcakes. Therefor we have to cut the pork belly and the turnip into cubes. The apple has to be grated. Afterwards we roast the pork belly within a pan till it turns a bit brownish. Then add the turnips and reduce the heat. After a while turn off the heat and add the apple aswell.

After that also the beans should be ready for being blended. To simplify this step you can add a bit of water. The resulting puree is seasoned generously with salt and pepper.

Now we are ready to prepare the sauerkraut topping. Put it into a pot with a bit of water, one tbsp. of honey and some salt and let it braise for around 15 minutes.

Meanwhile we will finish the dough for the cupcakes. Therefor we have to separate the eggs into yolk and eggwhites. The latter are beaten till they are stiff. The yolks are stirred. As soon as they look creamy add the bean puree and mix everything together. Now add the beaten egg whites and mix everything together gently.

For the last step we need a muffin tin. This is filled with the cupcake dough. In the middle of each cupcake you have to add a bit of the pork belly and turnip mixture. Bake the cupcakes for 20-30 minutes at 200 °C. Afterwards put the sauerkraut on top of them and serve the dish still hot!

Enjoy it :) !

Garnelenpakete auf Mango- Chili- Relish / Prawnpackages with mango- chili- relish

Zutaten (2 Portionen)

14  Garnelen
~ 80g Udonnudeln
1 Chilischote
1 kleine Schalotte
50ml Mangosaft (z.B. Rauch)
1 EL Essig
1 TL Honig
1 EL Mehl
Saft 1/2 Zitrone
1 Ei
1 EL süße Teriyakisauce
fein geriebener Parmesan
Salz, Pfeffer

Zubereitung

Ingredients

14  prawns
~ 80g udon noodles
1 chilipepper
1 small shallot
50ml mangojuice (e.g. Rauch)
1 tbsp. vinegar
1 tsp. honey
1 tbsp. flour
juice of 1/2 lemon
1 egg
1 tbsp. sweet teriyakisauce
grated parmesan
salt, pepper

Preparation

The deep-frozen prawns are salted, peppered and mixed up with half of the lemon juice. Then you can put them aside for resting.

Next the chili peppers are cored and cut into thin slices. Also the shallots are cut in small pieces and then both of them are shortly fried in a pot. After few seconds you add the vinegar. Now the mango juice is mixed up with 1tbsp. of flour and the rest of the lemon juice. You can add the mango juice also to the pot stirring the mixture permanently. The heat is reduced to the lowest level and the relish has to simmer for about 20 minutes. You should taste it from time to time and add some salt if necassary.

Afterwards the noodles have to be cooked for about 7 minutes. Then they should cool down and get sticky.

The next step is pretty time-consuming. You have to take a bundle of noodles (5-10) and wrap them tightly around the prawns.

To get a tasty crust on the prawns we will now mix up the egg and the teriyakisauce with a pinch of salt. The prawns have to be coated with the egg mixture. Subsequently the parmesan is also spread over the prawns. The prawns are now ready to go into the oven at 200°C. As soon as they get a goldenbrown crust you can take them out and serve them together with the relish.

Tip: You can serve the dish with some mixed salad and a simple yoghurt dressing.

Enjoy it :) !
