Weihnachtlicher Blue-Avocado Dip / Christmas Blue-Avocado Dip

Zutaten (2-4 Portionen)

Aufwand: gering

2 Avocados
150g Blauschimmelkäse
1 Zwiebel
2 Knoblauchzehen
Saft 1/2 Zitrone
20ml Milch
1 Prise Zimt
1 Prise Zucker
Salz, Pfeffer
Walnüsse

Zubereitung

Ingredients

Effort: low

2 avocados
150g bluecheese
1 onion
2 garlic cloves
juice of 1/2 lemon
20ml milk
1 pinch of cinnamon
1 pinch of sugar
salt, pepper
walnuts

Preparation

It is time to say goodbye to the beautiful Finland and the nice people I met here. As my sister came visiting me with her boyfriend, I thought of preparing some small surprise. I decided for a avocado dip with blue cheese and potato wedges.

First of all we will cut the onion and the garlic into small pieces. Those are roasted in olive oil for some minutes. After that add a pinch of cinnamon and sugar for the Christmas taste.
Then the vegetables are degalzed with the milk and the in smaller pieces cut cheese is added. The mixture should simmer till it turns into a creamy cheese sauce.

Meanwhile the avocados should be peeled, cored and cut into small cubes. If you are equipped with a blender just put the avocado into that, otherwise you also can mash them with a fork. Add the lemon juice, a bit of salt and pepper and some chopped walnuts.

As soon as the cheese sauce is creamy you should remove it from the hotplate and let it cool down for a few minutes. Afterwards mix up the cheese sauce and the avocado cream so you get a fluffy and tasty avocado dip.

Like I said before we enjoyed the dip with some potato wedges, but of course you can try everything dip-able ;)

Enjoy it :) !

Roastbeef mit Erdäpfelschmarrn / Roastbeef with pan fried potatoes

Zutaten (2-4 Portionen)

Aufwand: mittel

800g Roastbeef
4 mittlere Kartoffel
1 Apfel
100ml Apfelcider
1/2 Chillischote
1EL Essig
1EL Honig
100g Pilze (z.B. Birkenpilz)
1EL echten Kakao
1 Bund Dill
1 Becher Joghurt
Salz, Pfeffer, Zimt

Zubereitung

Ingredients

Effort: medium

800g roastbeef
4 middle-sized potatoes
1 apple
100ml applecider
1/2 chillipepper
1EL vinegar
1EL honey
100g mushrooms (e.g. birch polete)
1tbsp. cocoa
1 bunch of dill
1 cup of joghurt
salt, pepper, cinnamon

Preparation

Today I had some tasty, solid roast beef with austrian influences for lunch.

We will start with the marinade, which we need for the meat. Therefor the apple gets washed, peeled and pitted. Afterwards it is cut into fine cubes. The same is done with the chillipepper. Then the apples and chillipeppers are heated together with the honey within a pot with oil. As soon as they start to get glazed you can add the cider, the vinegar some cinnamon (not too much) and salt. The mixture should now simmer for about 10 minutes.

Meanwhile we prepare the meat by cutting a pocket for the filling into it. Therefor you just have to cut near to the upper edge into the meat so that a border of 1cm remains to each side. Also the surface of the meat is slightly cut, so that the marinade can better settle.

The next step is to prepare the filling. Therefor we cut the mushrooms into small cubes and fry them with a bit of salt and pepper in a pan. As soon as most of the leaking liquid has vaporized we add the cocoa and remove the pan from the heat.

Next the meat is covered with half of the marinade and fried in a pan from every side (not more than 5 minutes overall). Afterwards the meat is filled with the mushrooms and covered with the rest of the marinade. Put the meat into a baking dish and into the oven at 80°C for about 2 hours.

Meanwhile the potatoes should be cooked for about 20 minutes. Then you cut them into smaller pieces and fry them with oil, salt and pepper till the look like in the picture.

For the sauce you just cut the dill, mix it together with the yoghurt and add salt and pepper for the taste.

Enjoy it :) !

Garnelenpakete auf Mango- Chili- Relish / Prawnpackages with mango- chili- relish

Zutaten (2 Portionen)

14  Garnelen
~ 80g Udonnudeln
1 Chilischote
1 kleine Schalotte
50ml Mangosaft (z.B. Rauch)
1 EL Essig
1 TL Honig
1 EL Mehl
Saft 1/2 Zitrone
1 Ei
1 EL süße Teriyakisauce
fein geriebener Parmesan
Salz, Pfeffer

Zubereitung

Ingredients

14  prawns
~ 80g udon noodles
1 chilipepper
1 small shallot
50ml mangojuice (e.g. Rauch)
1 tbsp. vinegar
1 tsp. honey
1 tbsp. flour
juice of 1/2 lemon
1 egg
1 tbsp. sweet teriyakisauce
grated parmesan
salt, pepper

Preparation

The deep-frozen prawns are salted, peppered and mixed up with half of the lemon juice. Then you can put them aside for resting.

Next the chili peppers are cored and cut into thin slices. Also the shallots are cut in small pieces and then both of them are shortly fried in a pot. After few seconds you add the vinegar. Now the mango juice is mixed up with 1tbsp. of flour and the rest of the lemon juice. You can add the mango juice also to the pot stirring the mixture permanently. The heat is reduced to the lowest level and the relish has to simmer for about 20 minutes. You should taste it from time to time and add some salt if necassary.

Afterwards the noodles have to be cooked for about 7 minutes. Then they should cool down and get sticky.

The next step is pretty time-consuming. You have to take a bundle of noodles (5-10) and wrap them tightly around the prawns.

To get a tasty crust on the prawns we will now mix up the egg and the teriyakisauce with a pinch of salt. The prawns have to be coated with the egg mixture. Subsequently the parmesan is also spread over the prawns. The prawns are now ready to go into the oven at 200°C. As soon as they get a goldenbrown crust you can take them out and serve them together with the relish.

Tip: You can serve the dish with some mixed salad and a simple yoghurt dressing.

Enjoy it :) !
