Bohnen Cupcakes | Bean Cupcakes


Um mal wieder etwas Abwechslung zu bekommen, habe ich beschlossen wiedermal etwas zu experimentieren. Daraus wurden diese Bohnencupcakes, die hauptsächlich Einflüsse aus der österreichischen und afrikanischen Küche haben.

Zutaten (2 Portionen)

Aufwand: mittel

200g Mungobohnen
2 Eier
1 kleiner Apfel
1 Mairübe
100g Bauchspeck
200g Sauerkraut
1 EL Honig
Salz, Pfeffer









Zubereitung

Für dieses Rezept müssen die Mungobohnen bereits am Vortag in ausreichend Wasser eingeweicht werden. Am nächsten Tag werden sie dann nocheinmal gut gewaschen und in frischem Wasser für etwa 30 Minuten gekocht.

Während die Bohnen kochen, bereiten wir die Füllung für die Cupcakes vor. Dafür werden der Speck und die Mairübe in 1x1 cm große Stücke geschnitten. Außerdem wird ein kleiner Apfel fein gehachelt. Der Speck wird in einer Pfanne angebraten. Sobald er eine bräunliche Färbung bekommen hat, werden die Mairüben beigegeben und die Hitze reduziert. Auch der Apfel kann nun hinzugefügt werden. Die Mischung sollte nun noch mit der Restwärme etwas dünsten.

Nun sollten auch die Bohnen bereit sein. Diese werden mit einem Stabmixer oder ähnlichem zu einem Brei püriert. Um diesen Vorgang etwas zu vereinfachen kann man etwas Wasser hinzufügen. Der Brei wird nun mit reichlich Salz und Pfeffer abgeschmeckt.

Als nächstes wird das Sauerkraut zubereitet. Dieses kommt einfach mit etwas Wasser, einem EL Honig und etwas Salz in einen Topf mit Deckel und wird für etwa 15 Minuten gedünstet.

Währenddessen vollenden wir den Teig für die Cupcakes. Zunächst werden 2 Eier in Eigelb und -weiß getrennt. Das Eiweiß wird zu Schnee geschlagen und beiseite gestellt. Das Eigelb wird cremig geschlagen und anschließend mit dem Bohnenbrei vermengt. Zuletzt wird der Eischnee sanft untergehoben, sodass eine fluffige Masse entsteht.

Im letzten Schritt wird ein Muffin-Blech mit dem Teig gefüllt. In die Mitte kommt eine Portion des Speck und Rüben Gemisches. Nun kommen die Cupcakes bei 200°C für etwa 20-30 Minuten in das Backrohr. Danach müssen die Cupcakes nur noch mit dem Sauerkraut-Topping bestückt werden und es kann serviert werden!

This week I decided to cook something completely different and tried one of the recipes I had in mind, but wasn't sure if the result would be edible ;). The result are these Bean Cupcakes which are mainly influenced by the austrian and african cuisine.


Ingredients

200g Mung beans 2 eggs 1 small apple 1 May turnip 100g smoked pork belly 200g sauerkraut 1 tbsp. honey salt, pepper


Preparation (2 Persons)



For this recipe we have to soak the mung beans for around 12 hours. So be prepared to start with this the day before cooking. At the next day you have to wash the beans and cook them in fresh water for around 30 minutes.

Meanwhile we will prepare the filling of the cupcakes. Therefor we have to cut the pork belly and the turnip into cubes. The apple has to be grated. Afterwards we roast the pork belly within a pan till it turns a bit brownish. Then add the turnips and reduce the heat. After a while turn off the heat and add the apple aswell.

After that also the beans should be ready for being blended. To simplify this step you can add a bit of water. The resulting puree is seasoned generously with salt and pepper.

Now we are ready to prepare the sauerkraut topping. Put it into a pot with a bit of water, one tbsp. of honey and some salt and let it braise for around 15 minutes.

Meanwhile we will finish the dough for the cupcakes. Therefor we have to separate the eggs into yolk and eggwhites. The latter are beaten till they are stiff. The yolks are stirred. As soon as they look creamy add the bean puree and mix everything together. Now add the beaten egg whites and mix everything together gently.

For the last step we need a muffin tin. This is filled with the cupcake dough. In the middle of each cupcake you have to add a bit of the pork belly and turnip mixture. Bake the cupcakes for 20-30 minutes at 200 °C. Afterwards put the sauerkraut on top of them and serve the dish still hot!

Gebratene Nudeln mit Mohnrind / Poppybeef fried noodles




Zutaten (2 Portionen)

Aufwand: mittel

1 Rinderschnitzel
ca 20g Mohn
1 Ei
etwas Mehl
1 EL Sojasauce
2 Knoblauchzehen
Salz, Pfeffer
Nudeln für 2 Personen
ca 100g Kräuterseitlinge (oder andere Pilze)
beliebige Sprossen
50ml Schlagobers
Salz, Pfeffer

Zubereitung

Vorerst wird das Fleisch unter kaltem Wasser gewaschen und anschließend in Streifen geschnitten. Diese Streifen werden nun mit 1EL Sojasauce, 2 gepressten Knoblauchzehen und etwas Salz und Pfeffer vermengt und im Kühlschrank kalt gestellt.

Danach sollten auch schon die Nudeln in kochendes Wasser gegeben werden.

Anschließend werden die Kräuterseitlinge in kleinere Stücke geschnitten und in einem heißen Wok scharf angebraten. Sobald sie leicht bräunlich werden und einen glasigen Mantel bekommen, wird mit Schlagobers aufgegossen und mit Salz und Pfeffer abgeschmeckt.

Nun werden ein Schüssel und zwei Teller vorbereitet, wobei die Schüssel mit einem Ei und die Teller mit Mehl bzw. Mohn befüllt werden. Anschließend wird das Fleisch mit dem Mohn paniert. Dafür die Fleischstücke zuerst im Mehl wälzen, danach im Ei schwenken und zum Schluss noch durch den Mohn gezogen.

Die panierten Fleischstückchen werden nun ebenfalls scharf von beiden Seiten angebraten. Dies sollte nicht länger als 1-2 Minuten dauern, sodass die Streifen innen noch etwas rosa bleiben.

Nun wird die Pilzsauce erneut erhitzt und mit den gekochten Nudeln vermengt. Auch die Sprossen kommen hinzu. Anschließend kann schon serviert werden!

1 beef cutlet
ca 20g poppy seeds
1 egg
a bit of flour for the panade
1 tbsp soy sauce
2 garlic cloves
salt, pepper
noodles for 2 persons
ca 100g king oyster mushrooms (or others)
sprouts
50ml  double-cream
salt, pepper

Preparation

We will start with a marinade for the meat. Therefor we just mix up 1 tbsp. of soy sauce, 2 pressed garlic cloves and a bit of salt and pepper. The meat is cut into slices and mingled with the sauce.

After that the noodles can already go into the water and cook till they are al dente.

Meanwhile the mushrooms are cut into small pieces and fried in a hot Wok. As soon as they turn a bit brownish and become glazed, add the cream and season it with salt and pepper.

Next you will prepare a bowl and two smaller plates. Into the bowl you will crack an egg and whisk it. One of the plates is filled with flour the other with poppy seeds. Now roll the meat through the flour, put it into the egg and finally dry it up with the poppy seeds.

Now fry the meat pieces from both sides. But pay attention that the meat is no longer than 2 minutes in the pan so it stays pink in the middle.

Heat up the mushroom sauce again and add the cooked noodles. Also the sprouts are added to the pasta.
