Curry-Pesto Cannelloni


Sodala diese Woche gibt es das nächste Curry-Pesto Rezept. Für alle die es noch immer nicht gesehen haben hier findet ihr das Pesto.


Zutaten (~3 Portionen)

Aufwand: gering


1 Fenchelknolle
3 EL Curry-Mango Pesto
2 EL Mascarpone
1/2 Zucchini
3 Ananasscheiben
1 Schuss Dessertwein
~ 9 Cannelloni
Geriebener Parmesan
Bechamelsauce
Salz, Pfeffer


Zubereitung

Zuerst wird der Fenchel in feine Stücke geschnitten und in etwas Öl kurz angebraten. Anschließend wird er mit einem Schuss Dessertwein (alternativ Wein + Honig) abgelöscht und für etwa 5 Minuten gedünstet.

Danach werden auch die Ananasscheiben in kleine Stücke geschnitten. Anschließend kommen diese zusammen mit dem Fenchel, dem Pesto und der Mascarpone in eine Schüssel und werden gut vermischt. Die Füllung muss nun nur noch mit Salz und Pfeffer abgeschmeckt werden, auch etwas Currypulver kann noch hinein.

Für die Bechamelsauce findet man etliche Rezepte im Internet. Für diese Version kommt noch eine 1/2 gehachelte Zucchini hinzu und wird kurz mitgekocht. Außerdem sollte die Sauce reichlich gesalzen und gepfeffert werden.

Zuletzt werden die Cannelloni gefüllt und in einer Backform nebeneinander geschlichtet. Darüber kommt die Bechamelsauce und der geriebene Parmesan. Das ganze muss nun für etwas 20 Minuten bei 180°C in den Backofen.

Ingredients

1 fennel
3 tbsp. pesto
2 tbsp. mascarpone
1/2 zucchini
3 pineapple slices
1 shot dessert wine
~ 9 cannelloni
grated parmesan
Bechamelsauce
salt, pepper


Preparation (~3 portions)


First the fennel is finely cut into pieces and roasted in a bit of oil. Afterwards you have to deglaze them with a shot of dessert wine. The fennel should be braised for 5 minutes.

Now you have to cut the pineapple in small pieces too. Those are mixed together with the fennel, pesto and mascarpone. The filling is now ready but can be seasoned with salt, pepper and a bit of curry powder.

For the bechamelsauce itself you can find a lot of recipes on the internet. For our version we will also add 1/2 grated zucchini and cook it for a while with the sauce. You should add salt and pepper to the sauce too.

Within the last step we only have to fill the cannelloni, place them in some baking form and add the sauce and grated parmesan on top. Put the whole thing into the oven at 180°C for about 20 minutes and you are done.

Hühnchenroulade mit Currypesto | Pesto filled Chicken Roulade


Wie bereits letzte Woche angekündigt, folgt dieses Mal ein vollständiges Rezept mit dem Curry-Mango Pesto. Falls ihr den Beitrag von letzter Woche nicht gelesen habt, findet ihr ihn hier zum Nachlesen.


Aufgeschnittene Hühnchenroulade mit Sauce und Reis

Zutaten (~2 Portionen)


Aufwand: gering



2 Hühnerschnitzel
2 EL Curry-Mango Pesto
120g Parmesan, gerieben
200ml Milch
1 Bund Petersilie
Salz, Pfeffer












Zubereitung

Zuerst werden die Hühnerschnitzel flachgeklopft, sodass sie sich später leichter zu einer Roulade formen lassen. Dafür verwenden sie einen Schnitzelklopfer falls vorhanden, im Notfall funktioniert es auch mit der flachen Seite eines großen Fleischmessers.

Anschließend werden die Schnitzel von beiden Seiten gesalzen und gepfeffert und zum Rasten zur Seite gelegt.

Für die Petersiliensauce, wird zunächst die Milch erhitzt. Sobald sie leicht zu Köcheln beginnt kommt der geriebene Parmesan hinzu, dabei immer gut umrühren. Die Sauce kann ebenfalls mit Salz und Pfeffer abgeschmeckt werden.

Nun werden die Schnitzel mit jeweils einem gehäuften Esslöffel Pesto gefüllt und eng eingerollt. Anschließend kommen sie mit etwas Öl in die Pfanne und werden etwa 20 Minuten bei mittlerer Stufe gebraten.

Zum Schluss wird die Sauce nocheinmal erhitzt und kommt gemeinsam mit dem Bund Petersilie in den Standmixer. Sobald eine sämige, grüne Sauce entstanden ist, können auch die Rouladen aufgeschnitten und gemeinsam mit der Sauce und Reis serviert werden.

Ingredients

2 chicken cutlets
2 tbsp. Curry-Mango Pesto
120g grated parmesan
200ml milk
1 bunch of parsley
salt, pepper


Preparation (~2 portions)



First we have to pound out the meat. This will later make it easier to form the roulades. In the best case use a meat mallet, if you don't have one you can also use the flat side of a big knife. After that add salt and pepper to both sides of the meat and give it a rest.

For the sauce we have to bring the milk to simmer and add the grated parmesan. You can also add some salt and pepper to the sauce.

The meat has now to be coated with 1 tbsp. of the pesto. Afterwards roll it so that the pesto is encapsulated by the meat. Then roast the meat with a bit of oil for arund 20 minutes at mid-heat.

Before you can serve the dish, heat the sauce again and put it into a blender together with the parsley. Blend it until you get a nice textured green sauce. After that you can serve the dish together with some rice like in the picture above.

Curry-Mango Pesto


Diese und in den folgenden Wochen widme ich mich einem Pesto mit asiatischen Einflüssen. Die Zubereitung entspricht der eines normalen Pestos, jedoch tendiert der Geschmack durch die Zutaten eher in die Richtung einer Satay sauce.
Heute gibt es einmal das Pesto selbst, ab nächster Woche folgen Rezepte für die das Pesto verwendet werden kann. Bis dahin müsst ihr eure eigenen Kreativität zeigen, natürlich freue ich mich auch wenn ihr eure Ideen mit mir und meinen LeserInnen teilt.

Mango-Curry pesto on a plate

Zutaten (~10 Portionen)


Aufwand: gering



200g Cashewnüsse
100g Sonnenblumenkerne
120g Parmesan, gerieben
1 Mango
2 EL Currypulver
Sonnenblumenöl
Salz, Pfeffer







Zubereitung

Für dieses leckere Pesto braten wir zuerst die Nüsse und Sonnenblumenkerne in etwas Öl gold-braun an. Die Nüsse sollten jedoch nicht zu dunkel werden, da sie sonst einen unangenehmen Geschmack entwickeln.

Anschließend wird die Mango geschält und in grobe Stücke geschnitten, diese kommen gemeinsam mit den Nüssen und Kernen in einen Standmixer und werden zu einem Brei zerkleinert. Ist die Masse zu dick für das Gerät kann schon etwas Sonnenblumenöl hinzugefügt werden. Nun kommt auch der Parmesan und das Currypulver hinzu.

Der Brei wird nun so lange unter Zugabe von Öl zerkleinert bis die gewünschte Konsistenz erreicht ist. Auch etwas Salz und Pfeffer kann zum Abschmecken hinzugefügt werden.

Zum Lagern wird das Pesto einfach in ein Marmeladenglas gefüllt und mit etwas Öl bedeckt.

This and the following weeks I will concentrate on some asian flavored pesto. The preparation is the same as for a normal pesto, but with the flavors of the ingredients it will also remind you of some asian sauce like satay.
Today I will only present the pesto itself, from next week on recipes using this pesto will follow. Till those recipes you have to be creative on your own. Of course I would be happy if you share your own ideas with me and the readers of my blog!

Ingredients 

Effort: low

200g cashews
100g sunflowerseeds
120g grated Parmesan
1 mango
2 tbsp. curry powder
sunflowerseed oil
salt, pepper


Preparation (~10 portions)


For this weeks recipes we will first roast the nuts and sunflowerseeds in oil till the cashews turn a bit brownish. 

Afterwards cut the mango in pieces and put them together with the nuts and seeds into a blender. If the mixture is too dry for the machine you can already add some oil. Then also add the parmesan and curry powder.

The mixture has to be blended while adding oil till the preferred consistency is achieved. At this point you can also add some salt and pepper for a better taste.

For storing the pesto you can put it into a jam jar and put some oil on top of it to prevent it from going off.

Bosna Knödel | Bosna Dumplings


Diese Woche ist mir wiedermal was leckeres gelungen :). Nach einer Diskussion über den schleichenden Rückgang der "Bosna-Standln" in Österreich, widmete ich mich sofort dem Geschmack der Bosna. Daraus resultierte die Idee für das dies wöchige Rezept, den Bosnaknödel.



Zutaten (4 Portionen)

Aufwand: hoch

400g fettarmes Schweinefleisch (vegetarischer Ersatz: Sojagranulat)
300g Bauchfleisch (vom Schwein)
2 Zwiebel
10 EL Ketchup
4 EL Senf
2 EL Currypulver
2 EL Majoran, gerebelt
1 TL Muskatnuss, gerieben
2 TL Salz
Pfeffer
600g festkochende Erdäpfel
150g Mehl
30g Weizengrieß
1 TL Vanillezucker
1 TL Salz
1 Ei



Zubereitung

Der erste Schritt ist nur für jene die einen Fleischwolf haben und die Zusammensetzung des Faschierten selbst kontrollieren möchten. Alle anderem nehmen einfach 600g Faschiertes. Die Fleißigen entfernen nun Sehnen und Knorpel aus dem Fleisch und schneiden es in kleine Stücke. Anschließend kommt das Fleisch durch den Fleischwolf mit dem 5mm Aufsatz.

Als nächstes werden die Zwiebel in möglichst feine Stücke gehackt und mit dem Faschierten vermischt. Dann kommen auch Ketchup, Senf, Curry, Majoran, Muskatnuss, Salz und Pfeffer hinzu und die Masse wird gut vermischt. Wird die Masse nicht ausreichend vermischt, entstehen Stellen mit geballter "Curry-kraft", die nicht sehr angenehm schmecken.

Aus der Masse werden nun Tischtennisball-große (oder etwas größere) Kugeln geformt und für etwa eine Stunde im Tiefkühlfach verstaut, dadurch lassen sie sich später leichter verpacken.

Für den Knödelteig benötigen wir gekochte Erdäpfel. Diese werden zunächst geschält und anschließend in gesalzenem Wasser gekocht. Danach legt man sie auf ein saugfähiges Blatt Küchenrolle oder ein Holzbrett zum auskühlen.

Sobald die Erdäpfel ausgekühlt sind werden sie durch eine Kartoffelpresse gepresst. Die Masse wird anschließend mit Mehl, Weizengrieß, Vanillezucker, Salz und einem Ei gut vermischt.  Oft wird der Teig nicht trocken genug und bleibt auf der Arbeitsfläche kleben, in diesem Fall muss man noch mehr Mehl hinzufügen.

Der Teig wird nun zu einer Rolle geformt und in 15 (je nachdem wie viele Fleischbälle ihr habt) Stücke geschnitten. Nun müsst ihr nur noch die Fleischkugeln ummanteln. Um ein Gefühl dafür zu bekommen seht euch folgendes Video ab Minute 05:11 an Knödel formen.

Die Knödel werden jetzt für etwa 15 Minuten im kochenden Wasser gebadet und können anschließend mit Sauerkraut (siehe Bohnencupcakes für die Anleitung) und Bratensaft serviert werden.

This weeks recipe is inspired by the typical Upper Austrian dish called Bosna, which looks pretty much the same like a hot dog but is made of bratwurst and a special sauce with ketchup, mustard and curry. Despite to the original Bosna which is mostly eaten at little booths, the Bosna Dumplings can be prepared in bigger portions and served for lunch or dinner at home.


Ingredients 

Effort: high


400g lean pork meat 
300g pork belly 
2 onions 
10 tbsp. Ketchup 
4 tbsp. Mustard 
2 tbsp. curry-powder 
2 tbsp. rubbed marjoram 
1 tsp. grated nutmeg
2 tsp. salt
pepper

600g waxy potatoes
150g all-purpose flour
30g semolina
1 tsp. vanilla sugar
1 tsp. salt
1 egg



Preparation (2 Persons)


For those who have a meat grinder at home and want to decide the fat content of the resulting meat on their own should follow this step. All the others can buy minced meat in the shop. First remove the gristles and tendons from the meat. After that cut it in smaller pieces and process it with the meat grinder.



Now we have to chop the onions into very small chunks and mingle them with the minced meat. Then add also the ketchup, mustard, curry, marjoram, nutmeg, salt and pepper. From this mixture you have to create ping-pong-like balls. Those have to rest in the freezer for one hour. This will ensure an easier processing at the end. 



For the dumpling dough we need boiled potatoes, which should be peeled before you cook them in salted water. Afterwards put them on some paper towls or a wooden board for cooling down.



The chilled potatoes are now processed with the potato ricer. The resulting puree is mixed together with flour, semolina, vanilla sugar, salt and one egg. If the dough is too wet and sticky add further flour. The amount of flour needed depends on the quality of the potatoes.



Form a roll from the dough and slice it into 15 (or more if you got more meat balls) pieces. With those dough pieces you have to encase the frozen meatballs. To get a feeling for that you should watch the following video from minute 05:11 on Dumpling Shaping. They speak german, but I think the pictures are enough :).

Now you only have to boil the dumplings for 15-20 minutes. Serve them with some sauerkraut (have a look on the recipe Beancupcakes)  and gravy.
