Erdäpfel-Forelle | Potato Trout





Zutaten (2 Portionen)

Aufwand: mittel

2 Forellenfilets
2 Zweige Rosmarin
3 Erdäpfel
1 Petersilienwurzel
10g Butter
100ml Milch
Salz, Pfeffer
1 Pkg Sauce Hollandaise
2 EL Kapern
100 ml Fischfond


  

 



 

Zubereitung

Beginnen wir mit der Vorbereitung der Forellenfilets. Diese werden zunächst gesalzen und  mit den abgezupften Rosmarinnadeln bedeckt.

Im nächsten Schritt werden die Erdäpfel und die Petersilienwurzel geschält und weich gekocht.

Während die Filets etwas Geschmack annehmen und das Gemüse kocht, bereiten wir die Sauce zu. Dafür werden die Kapern zunächst mit einem Messer fein gehackt. Anschließend wird die Hollandaise erhitzt, mit dem Fischfond vermengt und kurz aufgekocht. Dann kommen die Kapern hinzu und die Sauce kann beiseite gestellt werden. Vor dem Servieren sollte sie nochmals erhitzt werden.

Nun sollte auch das Gemüse weich sein und es kann mit einer Kartoffelpresse zu einem Püree gepresst werden. Das Püree wird mit der Butter und Milch vermengt und mit Salz und Pfeffer abgeschmeckt.

Im letzten Schritt werden die Forellenfilets zunächst auf der Hautseite scharf angebraten, sodass die Haut knusprig wird. Anschließend wird der Fisch mit dem Püree bestrichen und im Rohr bei etwa 200 °C goldbraun gebacken.

2 trout filets
2 sprigs of rosmary
3 potatoes
1 parsley root
10g butter
100ml milk
salt, pepper
1 Pkg Sauce Hollandaise
2 tbsp. capers
100 ml fish stock


Preparation (3 portions)


Let's start with the trout filets. Just salt them and put the rosmary needles onto the filets.

Next we'll peel the potatoes and parsley root and cook them until they are becoming soft enough to squeeze them.

While the vegetables are cooking we can prepare the sauce. Therefore we have to finely cut the capers. After that you can put the Hollandaise and the fish stock into a pot and let it simmer for a while. As soon as the right texture is reached you can add the capers and remove the pot from the heat.

Now you can put the vegetables out of the water and squeeze them to a nice puree. Add some butter and milk to it and flavour it with salt and pepper.

The last thing to do is to sear the trout filets on the skin-side. After that you can put the puree on top of the filets and finish them within the oven at 200 °C until the puree on top of the filets is turning brown.

Bosna Knödel | Bosna Dumplings


Diese Woche ist mir wiedermal was leckeres gelungen :). Nach einer Diskussion über den schleichenden Rückgang der "Bosna-Standln" in Österreich, widmete ich mich sofort dem Geschmack der Bosna. Daraus resultierte die Idee für das dies wöchige Rezept, den Bosnaknödel.



Zutaten (4 Portionen)

Aufwand: hoch

400g fettarmes Schweinefleisch (vegetarischer Ersatz: Sojagranulat)
300g Bauchfleisch (vom Schwein)
2 Zwiebel
10 EL Ketchup
4 EL Senf
2 EL Currypulver
2 EL Majoran, gerebelt
1 TL Muskatnuss, gerieben
2 TL Salz
Pfeffer
600g festkochende Erdäpfel
150g Mehl
30g Weizengrieß
1 TL Vanillezucker
1 TL Salz
1 Ei



Zubereitung

Der erste Schritt ist nur für jene die einen Fleischwolf haben und die Zusammensetzung des Faschierten selbst kontrollieren möchten. Alle anderem nehmen einfach 600g Faschiertes. Die Fleißigen entfernen nun Sehnen und Knorpel aus dem Fleisch und schneiden es in kleine Stücke. Anschließend kommt das Fleisch durch den Fleischwolf mit dem 5mm Aufsatz.

Als nächstes werden die Zwiebel in möglichst feine Stücke gehackt und mit dem Faschierten vermischt. Dann kommen auch Ketchup, Senf, Curry, Majoran, Muskatnuss, Salz und Pfeffer hinzu und die Masse wird gut vermischt. Wird die Masse nicht ausreichend vermischt, entstehen Stellen mit geballter "Curry-kraft", die nicht sehr angenehm schmecken.

Aus der Masse werden nun Tischtennisball-große (oder etwas größere) Kugeln geformt und für etwa eine Stunde im Tiefkühlfach verstaut, dadurch lassen sie sich später leichter verpacken.

Für den Knödelteig benötigen wir gekochte Erdäpfel. Diese werden zunächst geschält und anschließend in gesalzenem Wasser gekocht. Danach legt man sie auf ein saugfähiges Blatt Küchenrolle oder ein Holzbrett zum auskühlen.

Sobald die Erdäpfel ausgekühlt sind werden sie durch eine Kartoffelpresse gepresst. Die Masse wird anschließend mit Mehl, Weizengrieß, Vanillezucker, Salz und einem Ei gut vermischt.  Oft wird der Teig nicht trocken genug und bleibt auf der Arbeitsfläche kleben, in diesem Fall muss man noch mehr Mehl hinzufügen.

Der Teig wird nun zu einer Rolle geformt und in 15 (je nachdem wie viele Fleischbälle ihr habt) Stücke geschnitten. Nun müsst ihr nur noch die Fleischkugeln ummanteln. Um ein Gefühl dafür zu bekommen seht euch folgendes Video ab Minute 05:11 an Knödel formen.

Die Knödel werden jetzt für etwa 15 Minuten im kochenden Wasser gebadet und können anschließend mit Sauerkraut (siehe Bohnencupcakes für die Anleitung) und Bratensaft serviert werden.

This weeks recipe is inspired by the typical Upper Austrian dish called Bosna, which looks pretty much the same like a hot dog but is made of bratwurst and a special sauce with ketchup, mustard and curry. Despite to the original Bosna which is mostly eaten at little booths, the Bosna Dumplings can be prepared in bigger portions and served for lunch or dinner at home.

400g lean pork meat 
300g pork belly 
2 onions 
10 tbsp. Ketchup 
4 tbsp. Mustard 
2 tbsp. curry-powder 
2 tbsp. rubbed marjoram 
1 tsp. grated nutmeg
2 tsp. salt
pepper

600g waxy potatoes
150g all-purpose flour
30g semolina
1 tsp. vanilla sugar
1 tsp. salt
1 egg



Preparation (2 Persons)


For those who have a meat grinder at home and want to decide the fat content of the resulting meat on their own should follow this step. All the others can buy minced meat in the shop. First remove the gristles and tendons from the meat. After that cut it in smaller pieces and process it with the meat grinder.



Now we have to chop the onions into very small chunks and mingle them with the minced meat. Then add also the ketchup, mustard, curry, marjoram, nutmeg, salt and pepper. From this mixture you have to create ping-pong-like balls. Those have to rest in the freezer for one hour. This will ensure an easier processing at the end. 



For the dumpling dough we need boiled potatoes, which should be peeled before you cook them in salted water. Afterwards put them on some paper towls or a wooden board for cooling down.



The chilled potatoes are now processed with the potato ricer. The resulting puree is mixed together with flour, semolina, vanilla sugar, salt and one egg. If the dough is too wet and sticky add further flour. The amount of flour needed depends on the quality of the potatoes.



Form a roll from the dough and slice it into 15 (or more if you got more meat balls) pieces. With those dough pieces you have to encase the frozen meatballs. To get a feeling for that you should watch the following video from minute 05:11 on Dumpling Shaping. They speak german, but I think the pictures are enough :).

Now you only have to boil the dumplings for 15-20 minutes. Serve them with some sauerkraut (have a look on the recipe Beancupcakes)  and gravy.
