Patata Frutti Di Mare

Potatos with seafood

Zutaten (4 Portionen)

Aufwand: niedrig

1kg Erdäpfel
150ml Milch
1 Zwiebel
100g Sauerrahm
1 Bund geschnittener Schnittlauch
Salz, Pfeffer
1/2 TL geriebene Muskatnuss
220g Meeresfrüchte (Miesmuscheln, Shrimps, Kalamari, ...)
1 Orange
50ml Weißwein
1 rote Paprikaschote
1 Msp. Chilli
2 Knoblauchzehen

Zubereitung

Ingredients

Effort: low

1kg potatoes
150ml milk
1 onion
100g sourcream
1 bunch of chopped chives
salt, pepper
1/2 tsp. grated nutmeg
220g seafood (mussels, shrimps, ...)
1 orange
50ml white wine
1 red sweet pepper
1 pinch chilli
2 garlic cloves

Preparation

First we will wash and peel the potatoes. After that cook them in salty water for about 20 minutes (depending on the size).

Meanwhile we put the seafood in a bowl and season it with salt, pepper and a pinch of chilli. Now squeeze the orange and add the juice also to the seafood.

For the potatoes we have to chop the onion into smaller slices. After you dried your tears again the potatoes should also be ready. Cut them flaky like you do for a potato salad. Now the onion goes into a pot with 150ml milk and are sauteed for about 5 minutes. Afterwards add the potatos and 100g sourcream. Reduce the heat, but still remember to stir the potatoes from time to time. You can season the mixture with salt, pepper and grated nutmeg.

While the potatoes are still cooking on low heat, we will finish the seafood. Put them into a pan with oil and roast them. As soon as the leaking water has vaporized add another shot of oil and the riced garlic. Now cut the sweet pepper in small cubes and add it to the seafood, then deglaze it with the white wine. When the wine has reduced to the half  the seafood is ready too.

Now we mix togehter both of the components and the cives and serve the dish!

Enjoy it :) !

Rosmarin-Wasabi-Hendl mit Preiselbeerkartoffel / Rosemary-Wasabi-Chicken with cranberrypotatoes

Zutaten (2 Portionen)

Aufwand: gering

2 Hühnerkeulen mit Haut
2 große Kartoffel
50g Butter
1 Handvoll Preiselbeeren
Rosmarin
2 EL Wasabipaste
Salz

Zubereitung

Ingredients

Effort: low

2 chicken legs
2 big potatoes
50g butter
1 handful cranberries
rosemary
2 tbsp wasabi-paste
salt

Preparation

For this dish we will start with mixing together the butter with the rosemary, the wasabi-paste and salt. The amount of rosemary really depends on your taste, I like it if there is much of it in the butter, but you have to try for your own.

At next you have to cook the potatoes for about 20 minutes in salty water. Afterwards you put them on a board and press them flat with the pot.

Then you will take the butter and fill it between the chicken meat and the skin of the legs. If there remains some butter you can put this on the potatoes together with the cranberries.

Now the chicken legs have to go into the oven at 170°C for about half an hour. After that you turn the legs around and put them in for another half an hour. For the last half an hour the legs are turned around again so that the skinny part is on top, furthermore the potatoes are now added to the baking pan.

As soon as the skin of the chicken turns goldenbrown, you can take it out and serve it.

Enjoy it :) !

Kartoffelwolken (Beilage) / Potatoeclouds (side dish)

Zutaten (2 Portionen)

400g Erdäpfel
80ml Milch
30g Butter
Salz
Pfeffer
2 Eiweiß

Zubereitung

Ingredients

400g potatoes
80ml milk
30g butter
salt
pepper
2 egg whites

Preparation

This time we prepare some side dish for meat-dishes. Therefor we first peel the potatoes and cut them into equally sized pieces. Then those pieces are put into a pot and fill it with water so that the potatoes are covered with water. Add some salt and let the potatos cook for about 20 minutes.

While the potatoes are cooking, you can separate the eggs and whip it.

As soon as the potatoes are ready, you can press them through a noodle sieve so we get creamy mashed potatoes. Now the potatoes are cooked in a pot with the butter and half of the milk. Stir the mash till it is creamy and add the rest of the milk. Then stir them again till they are creamy. Now you can add some salt and pepper.

As last step we mix up carefully the mashed potatoes and the whipped egg whites. We end up with a fluffy potatoecream which we now separate into small cloud-like portions and put them onto a baking plate. The potatoe clouds are now baked at 200°C till they turn goldenbrown.

Enjoy it :) !

P.S.:
It's hard to get the perfect mass so that the clouds are fluffy, but don't loose their shape while baking. If you have tips for the recipe please leave a comment.
