Sonntags Beiried | Sunday Roastbeef







 

Zutaten (4 Portionen)

Aufwand:mittel (aber zweitägig)

1 kg Beiried 
3 EL grobes Salz
2 EL Pfefferkörner
1 EL Wacholderbeeren
1 Bund Schnittlauch
4 Erdäpfel
1 Pkg Zitronen-Dill Sauce (z.B. bei Ikea)


  

 





 

Zubereitung

Diesmal hab ich mich mit einem typischen Sonntagsessen beschäftigt, einem langsam gegarten Beiried in Salz-Pfeffer Kruste.

Im ersten Schritt werden das Salz, die Pfefferkörner und die Wacholderbeeren in einem Mörser möglichst klein zerstampft. Anschließend wir der Schnittlauch fein geschnitten und der Salz-Pfeffer Mischung vermengt. 

Im nächsten Schritt wird eine Küchenfolie ausgelegt. In die Mitte kommt die Salz-Pfeffer Mischung und darauf das Beiried. Anschließend wird das Beiried fest in die Folie eingewickelt und kommt über Nacht in den Kühlschrank.

Am nächsten Tag kann das Beiried aus der Folie genommen werden. Nun wird es auf allen Seiten für 2 Minuten scharf angebraten. Die Seite mit dem Fett wird als letztes und für 3 Minuten angebraten. Anschließend kommt das Beiried bei ca 90°C (auf jeden Fall unter 100°C) für 5 Stunden in das Backrohr.

In der Zwischenzeit werden die Kartoffel in Wedgesform geschnitten und beliebig mit Salz, Pfeffer, Öl und anderen Gewürzen mariniert. Sobald das Beiried fertiggegart ist kommt es aus dem Backrohr und wird zum Rasten beiseite gestellt. Währenddessen werden die Wedges bei 200°C gold-braun gebacken. Außerdem kann die Zitronnen-Dill-Sauce aufgekocht werden.

Das Beiried kann nochmal auf der Fettseite angebraten werden. Anschließend wird es fein aufgeschnitten und gemeinsam mit den Wedges und der Sauce serviert.

1 kg Roastbeef
3 tbsp. coarse salt
2 tbsp. black peppercorns
1 tbsp. juniper berry
1 bunch of chives
4 potatoes
1 Pkg lemon-dill sauce (e.g. Ikea)


Preparation (4 portions)

This time I will present you a typical sunday meal, a slowly cooked roastbeef in salt and pepper crust.

First of all we'll put the salt, pepper and juniper berries into a mortar and finely grind it. Then the chives are chopped and also mixed to the salt-pepper mixture. 

Now spread a piece of plastic wrap onto the kitchen table and scatter the salt and pepper mixture over it. Then wrap the roastbeef tightly with the foil and put the package into the fridge overnight.

Next day take out the roastbeef again and sear it from all sides for around 2 minutes. After that you can put the roastbeef into the oven at 90°C for around 5 hours.

Meanwhile you should start to cut the potatoes into the shape of wedges and season them with salt, pepper, oil and any other spice. As soon as the roastbeef has cooked for 5 hours you can put it aside and start to bake the wedges at 200°C until they turn golden-brown. Also the lemon-dill sauce should be prepared, if you use a convinience product just heat it up and it is ready to serve.


At the end you can sear the meat on the fatty side for another 2 minutes. Afterwards cut it into fine slices and serve it together with the wedges and a bit of the sauce.

Erbsen gefüllte Erdäpfel | Pea-filled Potatoes







Zutaten (2 Portionen)

Aufwand: gering

2 große Braterdäpfel
100g Erbsen
100g geriebener Käse
Prosciutto
1 Messerspitze Muskat
Salz, Pfeffer


  

 





 

Zubereitung

Für diese Rezept benötigen wir 2 große Bratkartoffel. Diese kommen zunächst für etwa 40 Minuten bei 200 °C ins Backrohr. Zur selben Zeit werden die Erbsen für etwa 10 Minuten in etwas Wasser gekocht.

Anschließend werden die Erdäpfel auf einer Seite aufgeschnitten und mit einem Teelöffel ausgehölt. Aufpassen, dass die Hülle nicht zu dünn wird. Sonst würde der Kartoffel später aufreißen. Das Kartoffelinnere wird gemeinsam mit den Erbsen und mithilfe einer Kartoffelpresse zu einem Püree verarbeitet. Dieses wird mit dem Käse, der Messerspitze Muskat und etwas Salz und Pfeffer vermengt.

Nun werden die Eräpfel wieder mit der Masse gefüllt und bei 200 °C im Backrohr für 10 Minuten fertig gebacken.

Währenddessen wird der Proscuttio in Streifen geschnitten und in einer kleinen Pfanne knusprig gebraten.

Die fertigen Erdäpfel werden mit den Proscuttiostreifen garniert und heiß serviert.

2 big potatoes
100g green peas
100g grated cheese
prosciutto
1 pinch nutmeg
salt, pepper


Preparation (2 portions)

First of all we'll put the potatoes into the oven for around 40 minutes at 200 °C. At the same time we can start to cook the frozen peas with a bit of water for 10 minutes.

As soon as the potatoes are ready, take them out and cut off a bit from one long side. From this cut you can start to carve the potato out with the help of a teaspoon. Pay attention that a evenly thick hull remains. Now put the potato pieces you carved out and the peas into a potato ricer and press both to a puree. The puree is now mixed together with the cheese, the nutmeg and a bit of salt and pepper.

Now you are ready to put the puree back into the potatoes and bake them again at 200°C for about 10 minutes.

Meanwhile cut the proscuttio into slice and fry them in a small pan until they become crispy.

After the 10 minutes of baking the potatoes, put them out, garnish them with the fried proscuttio and serve them hot.

Erdäpfel-Forelle | Potato Trout





Zutaten (2 Portionen)

Aufwand: mittel

2 Forellenfilets
2 Zweige Rosmarin
3 Erdäpfel
1 Petersilienwurzel
10g Butter
100ml Milch
Salz, Pfeffer
1 Pkg Sauce Hollandaise
2 EL Kapern
100 ml Fischfond


  

 



 

Zubereitung

Beginnen wir mit der Vorbereitung der Forellenfilets. Diese werden zunächst gesalzen und  mit den abgezupften Rosmarinnadeln bedeckt.

Im nächsten Schritt werden die Erdäpfel und die Petersilienwurzel geschält und weich gekocht.

Während die Filets etwas Geschmack annehmen und das Gemüse kocht, bereiten wir die Sauce zu. Dafür werden die Kapern zunächst mit einem Messer fein gehackt. Anschließend wird die Hollandaise erhitzt, mit dem Fischfond vermengt und kurz aufgekocht. Dann kommen die Kapern hinzu und die Sauce kann beiseite gestellt werden. Vor dem Servieren sollte sie nochmals erhitzt werden.

Nun sollte auch das Gemüse weich sein und es kann mit einer Kartoffelpresse zu einem Püree gepresst werden. Das Püree wird mit der Butter und Milch vermengt und mit Salz und Pfeffer abgeschmeckt.

Im letzten Schritt werden die Forellenfilets zunächst auf der Hautseite scharf angebraten, sodass die Haut knusprig wird. Anschließend wird der Fisch mit dem Püree bestrichen und im Rohr bei etwa 200 °C goldbraun gebacken.

Ingredients

2 trout filets
2 sprigs of rosmary
3 potatoes
1 parsley root
10g butter
100ml milk
salt, pepper
1 Pkg Sauce Hollandaise
2 tbsp. capers
100 ml fish stock


Preparation (3 portions)


Let's start with the trout filets. Just salt them and put the rosmary needles onto the filets.

Next we'll peel the potatoes and parsley root and cook them until they are becoming soft enough to squeeze them.

While the vegetables are cooking we can prepare the sauce. Therefore we have to finely cut the capers. After that you can put the Hollandaise and the fish stock into a pot and let it simmer for a while. As soon as the right texture is reached you can add the capers and remove the pot from the heat.

Now you can put the vegetables out of the water and squeeze them to a nice puree. Add some butter and milk to it and flavour it with salt and pepper.

The last thing to do is to sear the trout filets on the skin-side. After that you can put the puree on top of the filets and finish them within the oven at 200 °C until the puree on top of the filets is turning brown.
